The marimba is Nicaragua's national instrument, and nowhere does its rhythm feel more at home than in the mountains of Jinotega — the country's highest and largest coffee-growing region. Here, volcanic soil and generous shade canopy give smallholder farms room to grow coffee slowly, the way the mountain intends.

Washed and carefully sorted to European Preparation standards, this lot from Jinotega's high ridges cups with milk chocolate and roasted peanut up front, a bright citrus lift, and a light, clean body that lingers gently.
